The programme lists the typical dishes from Milan and the province that are made in such a way as to enhance the local produce using the correct cooking methods and ways of transforming the ingredients in order to certify the eateries that serve Authentic Milanese Cuisine.

Hence, the enterprises that voluntarily undertake to adhere to the DeCA brand make use of high-quality typical and seasonal produce (preferably obtained with traditional processing methods) to guarantee the denominations. They also adopt the original methods of preparing the recipes and they provide customers with information on the main characteristics of each dish to promote the Milanese history and gastronomic culture.

Each DeCA restaurant - identified by the logo affixed to their windows and menus - offers a minimum of five traditional Ambrosian dishes all year round; these vary in accordance to the seasonality of the produce.
